White eggplants stuffed with kasseri cheese


  • White eggplants 2 big
  • Kasseri cheese 100 gr
  • Sunflower oil for frying
  • Salt
For the batter
  • All-purpose flour
  • Water
  • Salt


Wash and peel the eggplants,remove the seeds,cut the into slices,brush them with olive oil,season with salt and bake them on a toaster or on the grill.Place on each eggplant slice a piece of cheese and roll it up.Use a toothpick to pin the roll together.Prepare the batter,mix the flour with the water and add salt.The batter should be thin.In a frying pan heat the sunflower oil.Dip the eggplant rolls in the batter and then fry them.Line them on parchment paper to absorb the excess sunflower oil and enjoy.
