Lemon cake


  • Butter 225 gr
  • Sugar 225 gr
  • Self-rising flour 300 gr
  • Baking powder 2 teaspoons
  • Eggs 4
  • Lemons 2 (the zest)
For the syrup
  • Sugar 100 gr
  • Lemons 2 (the juice)
For the icing (optional)
  • Caster sugar 225 gr
  • Lemon juice 5 tablespoons


In a bowl beat with an electric mixer the tender butter and the sugar until fluffy.Then add the flour,the baking powder,the eggs and the lemon zest,beat all the ingredients.Bake at 160 degrees for 35-40 minutes (until an inserted knife comes out clean).During baking time do not open the oven at all.Before pouring the syrup on the cake pierce it using a toothpick to absorb more syrup.Pour the syrup over the cake when the syrup is warm and the cake hot.For the icing melt the lemon juice with the caster sugar and pour it over the cake before it cools.
