Greek giouvetsi with squids (Squids with orzo pasta)


  • Squids 1 kg fresh or frozen
  • Olive oil 1 cup
  • Onion 1 item finely chopped
  • Garlic 2 cloves finely chopped
  • Tinned tomatoes 1 tin peeled and finely chopped
  • Tomato paste 3 tablespoons
  • Nutmeg 2 grains
  • Bay 1 leaf
  • Salt - pepper
  • Red wine 1 cup
  • Water 4 cups
  • Sugar 1 teaspoon
  • Olive oil 2 κουταλιές σούπας
  • Sweet paprika 1 teaspoon
  • Orzo medium 500 gr


Clean the squids,cut them into small pieces,wash and drain them.Peel the onion and the garlic,wash and chop them finely.In a shallow pan heat the olive oil until smoking,add the onion and the garlic,saute until golden ,add the finely chopped tomatoes,the tomato paste,salt,pepper,the nutmeg,a bay leaf and mix.Add the wine and stir until evaporated and then add the water,the sugar and then the squids.Simmer at medium heat for 30 minutes approximately and remove from the heat.In a deep frying pan add 2 tablespoons of olive oil,heat until smoking,add the sweet paprika,salt and the orzo pasta,saute for 3-4 minutes approximately and turn off the heat.In a roasting pan put the orzo pasta,add the squids with the their sauce and bake in preheated oven at 180 degrees for 20 minutes.If necessary add some more water during baking.Turn off the oven and keep it warm until serving time.Accompanied with fish roe salad.
