Handmade filo pastry ham and cheese pie


For the filling
  • Strained yogurt 300 gr
  • Kefalograviera cheese 150 gr grated
  • Parmesan 100 gr grated
  • Smoked ham 5 -6 slices cut into small pieces
  • Eggs 3 items
  • Fresh butter or margarine 1 full tablespoon
  • Pepper - sweet paprika 1/2 teaspoon of each
  • Dill 1 tablespoon finely chopped
  • Salt 1 pinch
  • Sesame for sprinkle
  • Olive oil for greasing
For the filo pastry
  • Handmade filo pastry 2 items see corresponding recipe
  • Butter or margarine 1 teaspoon
  • Water for sprinkling


First prepare the filo pastry sheets following the Handmade filo pastry recipe.In a big bowl add the yogurt,the eggs,both kinds of cheese,pepper,sweet paprika,the ham,the butter,salt and mix all the ingredients together.Grease a roasting pan with some olive oil,lay 1 of the prepared filo pastry sheets ( or 2 if the filo pastry is not handmade ),spread on top evenly the filling,top with the second filo sheet ( or 2 if they are not handmade ) and fold the edges of the sheets.Brush the sheet with some olive oil,score the pie slightly,sprinkle with a little water and some butter or margarine.Sprinkle some sesame and bake in preheated oven at 200 degrees for 30 – 35 minutes approximately depending on the oven.

* If the filo pastry sheets are not handmade,use 4 sheets instead of 2.
