Greek octopus stifado (octopus and onion stew)


  • Octopus 2 1/2 kg
  • Small onions 1 1/2 ( baby shallot onions )
  • Red dry wine 1 1/2 cup
  • Olive oil 1 cup
  • Peeled tomatoes 1 can
  • Allspice 2-3 corns
  • Bay leaves 2-3
  • Cinnamon stick 1
  • Pepper 2 corns ( or ground )
  • Salt a little


Clean and wash the octopus thoroughly and let it strain.Peel the onions and put them in a a pan with some water,bring to a boil.Remove the water from the pan and add 1/2 of the olive oil and saute the onions for 5 minutes.In a pan boil the octopus until tender and when it is ready,mix the octopus with the sauteed onions and add the remaining ingredients.Cover the pan and simmer at low heat until the sauce has thickened.

Optionally : 

When the octopus and the onions are boiled put them in a roasting pan and bake them for 30 minutes at 180 degrees.
