- Corn oil or sunflower oil for frying
- Glutinous rice 250 gr
- All-purpose flour 1 kg sifted
- Fresh yeast 60 gr
- Salt 1/2 teaspoon
- Sugar 1 teaspoon
- Orange juice 1 glass non carbonated
- Warm water 1/2 cup
- Water for boiling
- Feta cheese 600 gr crumled
- Pepper 1 teaspoon
In a pan boil the rice until semi-transparent and covered in the cooking juices,put it in a blender and puree.In a big bowl pour the non carbonated orange juice (or fresh juice),the warm water in which you have dissolved the fresh yeast,season with salt and pepper,add the sugar,the sifted flour,stir until the mixture looks like batter,add the pureed rice and the crumbled feta cheese,stir until the mixture combines.Cover the bowl and let it for 20 minutes until the mixture doubles in volume.In a deep medium sized pan add the corn oil and let it smoke.Take a handful of the batter in your palm and squeeze it out, between your thumb and index finger, using a wet teaspoon cut off the batter coming out of your handful and drop it in the oil.Follow the same procedure until the batter is finished (dip the spoon in a glass of water every time, so that the batter doesn’t stick on it).Fry the puffs,until brown and when they are ready remove them from the frying pan using a skimmer and place them onto absorbing kitchen paper to absorb the excess oil.They are ready to be served.
* Instead of fresh yeast you can use 2 sachets of dry yeast.
