Cuttlefish fricassee


  • Cuttlefish 1 1/2 kg
  • Spinach 1 1/2 kg
  • Lettuce 3 items finely chopped
  • Dill 1 small bunch finely chopped
  • Onion 1 big finely chopped
  • Spring onions 4 items finely chopped
  • Olive oil 6 - 7 tablespoons
  • Salt - pepper - spearmint
  • Bay leaf 1 item
  • Onion 1 small for boiling
  • Lemon


Clean and wash the cuttlefish,boil it for 15 minutes in salted water with the bay leaf and the small onion.When it is tender drain it,let it cool and cut it into smaller pieces ( keep the boiled water ).In a pan heat the olive oil and saute the onion and the spring onions,add the cuttlefish pieces,saute all the ingredients together and then add the spinach ( washed and cleaned ) and chop the lettuce finely.Saute all the ingredients together,season with salt and pepper,add the spearmint,stir and then add some of the boiled cuttlefish juice ( as much as needed to cover the food ) and simmer for 15 – 20 minutes.Serve it warm with some lemon juice and enjoy.
