Cheese stuffed eggplant rolls

Ingredients

  • Eggplants 2
  • Cream cheese 1 package
  • Basil 2 tablespoons finely chopped
  • Garlic 3 cloves finely chopped
  • Salt - pepper
  • Corn oil for frying

Instructions

Wash the eggplant,slice them into thin slices lengthwise and leave them into salted water for 1/2 hour.Drain them,heat the corn oil in a frying pan and fry the eggplant slices.In a bowl pour the cream cheese,add the finely chopped garlic,the basil,salt,pepper and stir thoroughly.After frying the eggplant slices,line them onto absorbing kitchen paper to absorb the excessive oil and stuff each slice with the cheese mixture.Roll them and line them on a dish,garnish with basil leaves and enjoy them.
