Cauliflower souffle


  • Cauliflower 1 1/2 kg boiled
  • Onion 1 small chopped
  • Eggs 3 items separate yolks from whites
  • Yellow cheese 200 gr grated
  • Yoghurt 2 talespoons
  • Parsley 2 tablespoons finely chopped
  • Dill 2 tablespoons finely chopped
  • Nutmeg a little ground
  • Salt - pepper
  • Self-raising flour 80 gr sifted
  • Olive oil 2 tablespoons


Clean and wash the cauliflower.Boil for 30 minutes in a pan with salted water until tender enough(or in a pressure cooker for 10 minutes)and drain.Beat the whites in a bowl until they just hold stiff peaks(but not dry)and in another bowl put the rest ingredients together,the cauliflower too,except flour.Stir and add the beaten egg whites,the sifted flour gradually(as much as needed,if necessary add more).Grease some cake molds and fill them with the mixture.Bake in preheated oven at 180 degrees  for about 25-30 minutes(depending on the oven)until puffed and golden brown.
