Baked butter beans


  • Butterbeans 500 gr
  • Carrots 3
  • Onions 2 big diced
  • Garlic 5 cloves cut into pieces
  • Celery finely chopped
  • Parsley finely chopped
  • Tomatoes 4 crushed and 2 cut into round pieces
  • Olive oil 1 cup
  • Salt - pepper
  • Sugar a little


Soak the butter beans overnight.The next day boil them with the carrots ( if you use a pressure cooker boil them for 1 /2 hour ).Drain and put them in a Pyrex.In a pan add the olive oil ans the saute the onion and the garlic slightly.Then add the tomato,salt,pepper,the parsley and the sugar.Bring to a boil and simmer for 5 minutes,pour the sauce over the butter beans.Cut the 2 tomatoes into round slices and layer them on top.Sprinkle with oregano and a little olive oil,add some water and bake them.( If you want you can add some crumbled feta cheese on top before you remove them from the oven )
