Ingredients
- Butter beans 500 gr
- Celery 3 sprigs
- Carrots 2 big
- Onions 3 big
- Garlic 4 cloves
- Cinnamon 1 stick
- Tomatoes 5 big finely chopped
- Salt - pepper
- Olive oil 2 small cups
- Bacon 6 slices
Instructions
Soak the butter beans the night before.Boil the beans for 40 minutes approximately.Strain and rinse.Saute the onions slightly and add the carrots,the herbs,the garlic and the finely chopped tomatoes.Add the butter beans,bring to a boil and simmer for 10 minutes.Place the beans in a roasting pan and line on top the bacon slices.Bake for 15 minutes approximately until the top crust is nicely brown.
