Pizza bolognese

Ingredients

For the dough
  • All-purpose flour 4 cups
  • Fresh yeast 60 gr or 2 sachets of 9 gr dry yeast
  • Lukewarm Water 1 cup
  • Sugar 1 teaspoon
  • Olive oil 3 1/2 tablespoons
  • Salt 1 teaspoon
For the filling
  • Ground beef 500 gr
  • Olive oil 4 tablespoons
  • Red wine 1/2 cup
  • Tomato paste 1 tablespoon
  • Onion 1 item finely chopped
  • Salt - pepper
  • Sweet paprika 1/2 teaspoon
  • Bay leaf 1 leaf
  • Parsley 1 tablespoon finely chopped
  • Tomato 1 1/2 items cut into slices
  • Grated pizza cheese 200 gr or grated Kefalograviera cheese

Instructions

For the dough : In a bowl add the lukewarm water and dissolve the yeast, add the sugar and leave it for 8 minutes. In a big bowl sift the flour, make a well in the middle and pour the dissolved yeast, the salt and the olive oil. Knead and if necessary add a little water or flour until the dough is pliable and does not stick to your hands. Shape the dough into a ball, put it in a bowl, cover it and leave it until it doubles in volume. Knead again and let it rise.

For the filling : In a shallow pan add the olive oil and sauté the paprika, the pepper and the ground beef until it changes color. Add the finely chopped onion, sauté and add the tomato paste. Mix, add the wine and stir until evaporated. Add the bay leaf and salt, cover the pan, turn the heat to medium-low and let it cook. Turn off the heat, remove the bay leaf, add the finely chopped parsley and stir.

Roll out the pizza dough. Grease with olive oil a baking dish (round or rectangular), spread the dough evenly and pour the filling. Cut the tomatoes into slices and place them on top. Sprinkle grated pizza cheese or grated Kefalograviera cheese. Bake in preheated oven at 180 degrees for 25 – 30 minutes approximately. Remove it from the oven and it is ready to be served.
