Syrup cake with strawberry mousse


For the cake
  • Self-rising flour 500 gr
  • Butter 250 gr melted
  • Eggs 3 items at room temperature
  • Milk 270 ml
  • Sugar 250 gr
  • Baking powder 1 teaspoon
  • Cocoa powder 4 tablespoons
  • Baking soda 1 teaspoon
For the syrup
  • Water 250 ml
  • Strawberry liqueur 3 tablespoons
For the mousse
  • Heavy cream 250 ml
  • Strawberries 400 gr
  • Caster sugar 2 tablespoons


For the cake : In a bowl beat with an electric mixer the eggs and the sugar thoroughly until fluffy and add all the remaining ingredients,continue beating for 2 minutes.Butter a round roasting pan with removable bottom and pour the batter in it.Bake in preheated oven for 40-45 minutes (it is ready when an inserted knife comes out clean) and let it cool.When it is cool cut the cake horizontally in 2 equal layers,using a serrated bread knife.

For the mousse : Peel and wash the strawberries.Cut them into pieces and put them in blender.Process until smooth but do not puree (leave some small pieces of strawberry) ,in a bowl beat with n electric mixer the cool heavy cream and the caster sugar until fluffy to make the whipped cream,add the pureed strawberries.Stir gently and refrigerate for 2 hours.

For the syrup : Mix the water with the strawberry liqueur and brush with the syrup the 2 equal cake layers.In case you do not have strawberry liqueur,use 2 tablespoons of sugar.

Assembly : After you have brushed with syrup the 2 cake layers,spread some of the filling on the first cake layer and place the other layer over it.Brush both sides with syrup and spread the remaining mousse on the top and the sides of the cake.Refrigerate for 1 hour at least to thicken and it is ready to enjoy it.
