Baked eggplants with cream cheese


  • Eggplant 1 big
  • Tomatoes 2 cut into round slices
  • Mayonnaise 2 tablespoons
  • Parmesan 80 gr grated
  • Salt - pepper
  • Dill for garnish
  • Olive oil


Wash the eggplant and cut it into round slices.Place them in a bowl,season with salt and pepper,brush them with some olive oil and mix well.Heat a little olive oil and bake the eggplants on the grill ( or in a toaster ).Meanwhile prepare the cream cheese,in a bowl add the grated Parmesan,the mayonnaise,salt,pepper and mix.Line the eggplant round slices on a platter,place on top a round slice of tomato and top with a spoonful of the cream cheese you prepared,garnish with some dill and enjoy.
