Spinach souffle


  • Spinach 1 kg
  • Onions 2 finely chopped
  • Feta cheese 300 gr grated
  • Stale bread 2 cups crumbed
  • Eggs 4 items beaten
  • Milk 2 cups
  • Regato cheese 100 gr grated
  • Edam cheese 100 gr grated


Wash and chop finely the spinach.In a frying pan saute the finely chopped onions with a little olive oil until tender ,add the spinach and saute again.Remove from the heat,season with salt and pepper,and add the grated feta cheese.Sprinkle the bottom of a large fireproof pan with a cup of crumbed bread.Pour into the roasting pan half of the spinach mixture,sprinkle with the rest of the bread crumbs and cover withe the rest spinach mixture.Sprinkle with the grated cheese,beat the eggs with the milk in a bowl and pout it over.Bake at 180 degrees for 20-30 minutes(depending on the oven)until golden brown evenly on top.
