Ingredients
- Lamb 1 kg leg of lamb
- Rosemary 8 small sprigs
- Olive oil 1/2 cup
- Dry red wine 1 cup
- Thyme 1 tablespoon
- Tomatoes 2 crushed
- Salt - pepper
Instructions
Wash and strain the lamb,sprinkle with thyme and season with salt and pepper.Pierce it and add the rosemary sprigs.Add the olive oil,the red wine,the tomatoes and bake it covered with some parchment paper at 200 degrees for 1 1/2 hour.During baking time add a little water and brush the meat with the sauce in the roasting pan.Remove the parchment paper and bake until it browns and the meat is tender.Cut it into servings and serve on a platter,pour the sauce over the meat.
