Roast rolled pork


  • Pork 2 kg pork neck boneless ( or pork belly slices )
  • Carrots 2
  • Garlic 3 cloves
  • Parsley 1/2 small bunch
  • Smoked cheese 200-250 gr ( with paprika )
  • Bacon 4 slices
  • Red pepper 1
  • Green pepper 1
  • Salt
  • Pepper


Ask your butcher to remove the bones of the pork neck and prepare the meat to make the roll ( it is not necessary if you use pork belly slices ).Cut the peppers,the carrots and the cheese into sticks.Chop finely the parsley and the garlic,add them in a bowl,season with salt and pepper and mix well.Spread over the meat the bacon,the carrot – pepper – cheese sticks,sprinkle with the parsley – garlic mixture,season with salt and pepper and roll it up.Tie with cooking string to secure.Cut a piece of parchment paper a little bigger then the pork roll and wet it.Roll it out,season with salt and pepper and wrap with it the pork roll.Then wrap it with 2 pieces of foil and refrigerate for 2 hours.Preheat the oven at 200 degrees and bake the pork roll for 15 minutes,turn it to be baked on all sides.Turn down the heat to 180 degrees and bake for 90 minutes.Remove it from the oven,remove the foil and the parchment paper and bake it again until brown on all sides ( do not overcook it,the meat should remain tender ).Remove it from the oven and let it rest for 10 minutes.Serve it with potatoes baked in the same roasting pan,or french fries or rice.
