Orange cream filled biscuits


For the biscuits
  • All-purpose flour 1/2 kg
  • Butter 250 gr at room temprature
  • Eggs 2
  • Sugar 1 cup
  • Baking powder 1 sacket
  • Orange zest of 1 orange
For the orange cream filling
  • Oranges 500 gr juice
  • Sugar 80 gr
  • Corn flour 50 gr
  • Orange 1 only the zest
For coating
  • Milk chocolate 200 gr


Biscuits : In a bowl beat with an electric mixer the butter with the sugar thoroughly,then add the eggs and continue beating.Add the flour and all the remaining ingredients,knead until the dough becomes smooth.Wrap the dough with a transparent wrapping film and refrigerate for 60 minutes.Then roll out the dough using a rolling pin  to 2 cm thick approximately and cut it into round shapes using a biscuit cutter(otherwise cut them using a glass).Line parchment paper in a roasting pan and place the biscuits onto it,bake in preheated oven at 170 degrees for 15 minutes(depending on the oven).Remove from the oven and press down on center of each biscuit with thumb while they are still warm to fill them with the orange cream later.Let them cool.

Orange cream : In a pan put the orange juice with the corn flour,whisk until the corn flour is dissolved thoroughly at low heat,add the sugar and the orange zest,whisk until the sugar dissolves.Taste the mixture and if it is sour add some more sugar.Turn up the heat and stir until the cream is thickened.Let it cool slightly and refrigerate for 30 minutes approximately.

Assembly : Melt the chocolate in bain marie.Place the biscuits on a wire rack and spread them with chocolate on their flat surface.Let the chocolate cool.Then turn them on the other side and using a spoon fill them with the orange cream.Using a piping bag make small markings on top of the cream and enjoy them.
