Octopus baked in parchment paper


  • Octopus 1 1/2 kg fresh or frozen
  • Red dry wine 1 cup
  • Potatoes 5-6 whole
  • Olives 10-15 chopped and seedless
  • Bay leaf 1
  • Raisins 2 tablespoons
  • Allspice 2-3 corns
  • Water 1/2 cup
  • Carrot 1


Clean and wash  the octopus and let it strain.On a parchment paper add the whole peeled potatoes,the olives,the raisins,the wine,the allspice,the carrot cut into round slices,the bay leaf,the water and then the octopus,turn the parchment paper to cover the octopus and tighten the edges like a parcel,then wrap it with foil.Place it in a roasting pan and bake at 180 degrees for 90 minutes approximately.Its juice should be left.

* Note : Baking time is according to the weight of the octopus,one kilo needs one hour baking.
