Lemon puff pastry rolls


  • Puff pastry 2 sheets
  • Butter 120 gr at room temperature
  • Sugar 160 gr
  • Eggs 3 items
  • Vanilla extract 1 item
  • Corn flour 4 teaspoons
  • Homemade lemonade 200 ml
  • Lemon zest of 1 lemon
  • Caster sugar to sprinkle
Homemade lemonade
  • Lemons 2 items
  • Water
  • Sugar 4 tablespoons


Squeeze the 2 lemons and pour their juice into a glass,add sugar and water as much as needed to reach 200 ml and stir thoroughly.In a pan beat the 2 eggs slightly.Add the lemonade,the butter,the sugar,the lemon zest and then the corn flour.At low heat stir the cream until thickens and let it cool.Roll out a sheet of the puff pastry,spread with half of the cream and roll it.Do the same with the other sheet of puff pastry.Refrigerate them for 15 minutes in order to cool and be cut easily.Lay parchment paper in a roasting pan,cut the rolls into 1 cm thick in way to form small rolls and place them into the roasting pan.Beat the yolk of the third egg,diluted with a little water and brush the rolls.Bake in preheated oven at 190 degrees for 20-25 minutes(depending on the oven)until golden brown,let them cool,sprinkle with caster sugar and enjoy.
