Greek striftopita ( Spiral cheese pie )

Ingredients

  • Handmade filo pastry sheet ( see corresponding recipe )
  • Yogurt 500 gr
  • Vegetable butter 250 gr
  • Feta cheese 800 gr
  • Black pepper 1 teaspoon
  • Salt 1 teaspoon
  • Olive oil 1/2 cup
  • Eggs 4

Instructions

Follow the recipe Χειροποίητο φύλλο για πίτες to make the filo pastry sheets.

When the filo pastry sheets are ready,prepare the filling.In a bowl mix all the ingredients and crumble the feta cheese,if it is not already crumbled.On a work surface lay one of the filo pastry sheets you made and with a spoon spread on the whole surface some of the mixture.Roll it up,brush with olive oil each time you roll the filo pastry sheet.Brush it with butter and roll the cylinder into a spiral,place it in a greased roasting pan ( like a crescent ).Follow the same procedure with the remaining sheets.After placing all the sheets in the roasting pan score them slightly with a knife and the pie is ready to be baked in preheated oven.Bake at 200 degrees for 30 – 35 minutes approximately.
