- Eggplants 2 cut into round slices
- Eggs 2 items beaten
- Salt - pepper - red pepper
- Corn oil for frying
Wash and cut the eggplants into round slices,leave them into salted water to remove bitterness for 10 minutes.Drain and dry them thoroughly using a kitchen towel.In a bowl beat the eggs,season with salt,pepper,red pepper and mix,in the meanwhile heat the corn oil in a frying pan.Dip the round slices one by one into the egg mixture and fry them until brown on both sides.Line them onto absorbing kitchen paper to absorb the excess oil and serve them warm.Optionally accompany with yogurt and garlic.
* For each eggplant use one egg.
