Chocolate tsoureki

Ingredients

For the dough
  • All-purpose flour 1 kg and 300 gr (for tsoureki)
  • Fresh yeast 80 gr
  • Eggs 7 items at room temperature
  • Vegetable butter 250 gr melted and warm
  • Salt 1/2 teaspoon
  • Sugar 400 gr
  • Orange zest 1 orange
  • Mastic 1/2 teaspoon
  • Mahlab 1 teaspoon
  • Warm milk 3 cups
  • Warm water 1/2 cup
For the filling
  • Dark chocolate 125 gr
  • Heavy cream 60-70 ml
  • Honey 1 tablespoon
For the coating
  • Dark chocolate 375 gr
  • Heavy cream 250 ml
  • Honey 1 1/2 tablespoon

Instructions

For the dough : Sift the flour.Melt in the blender the zest,the mahlab,the mastic and 1/2 tablespoon of sugar until they become powder.In a bowl put the yeast,add warm water and 1/2 cup warm milk,2 tablespoons of sugar,the salt and 4 tablespoons of flour,whisk until the mixture becomes a thin batter.Cover it,leave it in a warm place until it doubles in volume.In a big bowl beat with an electric mixer the sugar with the 6 eggs until the sugar dissolves and the mixture becomes fluffy.Add this mixture to the bowl with the eggs and the warm milk,continue beating with the mixer and add the yeast batter after it has doubled.Beat with the mixer and add the flour gradually,beat for 5 minutes approximately and then knead with your hands gently from the bottom to top.Meanwhile add the warm butter gradually just dipping your hands into the butter.Knead until the dough absorbs the butter totally. Cover the bowl and leave it in a warm place,let it double for 25-30 minutes approximately.When it has doubled,divide the dough into big balls.Divide each ball into 3 parts.Shape them into sticks of the same size,sprinkle with some flour the kitchen counter and roll out the dough into thin sheets.Place lengthwise a spoonful on each sheet of the * chocolate ganache,fold the edges to seal the chocolate in the dough and roll.Then plait the 3 rolls together.Follow the same procedure to prepare 4 more tsourekia.Butter a roasting pan,place the tsourekia in the roasting pan allowing room because they will double in volume,leave them covered in a warm place for 25-30 minutes approximately.Beat 1 egg with a little milk and when the tsourekia has doubled in volume brush them with the mixture.Bake in preheated oven at 180 degrees for 25-30 minutes depending on the oven.Let them cool and pour them over withe the * chocolate sauce.

* For the filling : In a saucepan put the heavy cream with the dark chocolate cut into pieces and stir constantly until the mixture combines,remove from the heat,add the honey and stir.

* For the coating : In a saucepan put the heavy cream wit the dark chocolate cut into pieces and stir constantly until the mixture combines,remove from the heat,add the honey and stir.Place the tsourekia on a wire rack and using a ladle our them over with the chocolate sauce.Let them cool and they are ready to enjoy them.

* Instead of fresh yeast,you can use 2 sachets of dry yeast.
