Almond baklava


  • Filo pastry 1 package
  • Almonds 250 gr roasted and finely chopped
  • Butter or margarine 200 gr
  • Cinnamon 1 tablespoon
For the syrup
  • Sugar 3 glasses
  • Water 2 glasses
  • Orange or tangerine 1/2 glass of its juice and 2 peels or 4 of the tangerine
  • Lemon 1/2 of its juice
  • Cinnamon for sprinkle


In a blender chop the almonds finely and roast them for 4 – 5 minutes.Put them in a bowl,add the cinnamon and mix.In a saucepan melt the butter or the margarine.On clean surface roll out the filo pastry sheets,sprinkle each sheet with butter and then spread on each sheet the almonds with the cinnamon.Layer 3 or 4 sheets and roll them up tightly,the roll should have uniform thickness.Cut the roll into slices,line them in a buttered roasting pan leaving some space between them and sprinkle with butter.Follow the same procedure until all the ingredients are used.Sprinkle with a little water.Bake in preheated oven at 180 degrees for 20 minutes approximately until they brown.Prepare the syrup,in a pan add the sugar,the water,the orange or tangerine juice,the orange or tangerine peels,bring to a boil and simmer for 7 – 8 minutes,then a add the lemon juice.When baklava slice are baked,remove them from the oven,line them them in another roasting pan and pour the syrup over them ( they should be hot ).Sprinkle with some cinnamon and serve.
