Kolokythokeftedes (baked zucchini balls)

Ingredients

  • Zucchinis 1 kg
  • Onion 1 item
  • Garlic 1 clove
  • Corn meal 5 tablespoons
  • Self-rising flour 3 tablespoons
  • Mint 1 tablespoon chopped
  • Dill - parsley 1 tablespoon finely chopped
  • Cumin 1 pinch
  • Olive oil 4 tablespoons
  • Salt - pepper
  • Paprika 1/2 teaspoon
  • Feta cheese grated 200 gr optional

Instructions

Wash the zucchinis,cut them into pieces and puree slightly in a blender.Add the onion and garlic and puree.Pour into a bowl the grated zucchinis,the onion,the garlic and the chopped herbs,the olive oil,the flour sifted,salt,pepper and the feta cheese optionally,stir using a tablespoon until all the ingredients combine.Refrigerate the mixture for 30 minutes approximately until it is thickened.Grease slightly a roasting pan,line with parchment paper,shape each tablespoon of the mixture into balls or any other shape and place them into the roasting pan.Bake in preheated oven at 180 degrees for 25-30 minutes(depending on the oven).Serve warm or cool.
