Ingredients
- Potatoes 7 medium sized
- Country sausage 1 big cut into thin slices
- Bacon 5 slices diced
- Olive oil
- Salt - pepper
- Paprika
- Parsley finely chopped for sprinkle(optional)
Instructions
Peel the potatoes and wash them thoroughly.Place each potato between two wooden cutting boards or something similar,so as not to cut the potatoes all the way through the bottom.Cut into slices straight down into each potato,until the knife reaches the cutting boards and the slices stay connected at the bottom,so as to look like “accordions”.Cut the sausage into slices thin enough to be inserted into the cuts of the potatoes.Dice the bacon.Insert in each cut a thin slice of sausage and a piece of bacon alternately.Line the potatoes into a roasting pan,brush them with olive oil,season with salt,pepper and paprika.Bake in preheated oven for 45-50 minutes(depending on the oven)until tender.Remove from the oven,sprinkle with finely chopped parsley and enjoy.
